Ray Ray, I love you

I love Rachel Ray (or Ray Ray as Derek and I like to call her.)

It all started when my sister bought me one of her cookbooks for my birthday. I wasn’t sold at first glance. I have heard good things about her, and I was definitely excited to get the book, but there were no pictures in it. And I am a girl who likes pictures in cookbooks. Despite the lack of pictures, I have used it several times, and the whole family has been pleased with the meals. Granted, most take me longer than 30 minutes to cook, and they seem to use a lot of ingredients. But, overall I have been pleased.

Then, a few weeks ago I discovered her tv show, 30 Minute Meals. I decided to start tivoing them, and oh my word! My like of Ray Ray turned into love! She makes me want to run into the kitchen and start cooking. Sure, she uses different ingredients than what I typically have on hand, but she makes it all look so easy! And all I have to do is remember to pick up potobello mushrooms or roasted red peppers or some other weird (at least to me) ingredient and I can make delicious dinners. On the menu this week is Vegetable Notsagna. Sort of like vegetable lasagna, but much, much easier.

Yum!

  1. Did you see my friend that looks like Rachel Ray? She lives in downtown Chicago and really does get stopped about once a week for an autograph – I can get you an autograph if you want! :0) Kaycee is also obsessed with RR…she stalked her at Chris’s work one day! :0)

  2. I like Ray Ray too! In fact, I have her 30 minute meals 2 on loan from the library. I took a stack of sticky notes to mark the pages I wanted to copy & I think it would be cheaper for me just to buy the book than to copy all the pages!!

let us know how the notsagna turned out!!

  3. OK…you have peeked my interest here…going to have to check her out now! :))) I need to get creative in the kitchen…if you can peel me away from scrappin! LOL
    xoxo
